Lesson 1
Students need to reserve 8 uncooked baby potatoes for use in Activity 5.1
Lesson 2
In the first part of Activity 5.1, students will identify items from the spice cabinet that may have lost potency. Be prepared to advise whether you’d like to hang onto those seasonings or replace them.
Lesson 5
If basil is out of season, students will probably need to make the alternative spinach pesto recipe. The flavor of the spinach fades into the background because the other ingredients are far more assertive.
Lesson 6
As mentioned in the video, this activity isn’t meant to replicate the feel of chopping onions. The purpose is to practice knife positioning and to get the flow of the pivoting action.
Lesson 7
For the narration, students should explain that onion cells are long and narrow and are arranged with the length running pole to pole (stem to root). Slicing onions pole to pole ruptures fewer cells than slicing side to side. This reduces the release of volatile compounds that irritate the eyes (lachrymator) and intensify the onion’s sharp flavor and odor (thiosulfinate).
Lesson 8
Consider carefully if you would like to supervise or assist with Activity 6.3 Sharp knives and slippery chicken can be a dangerous combination! The bones and scraps should be saved for stock (Activity 6.5). The boneless meat and wings can be used in the recipes of your choice or frozen for later use.
Lesson 9
The student’s model should show the unwinding of the collagen triple helix.
Lesson 14
Students are sometimes less than enthusiastic about making Cream of Cauliflower Soup, but the curry-infused drizzle makes this dish something special. They almost always ending up liking it a lot. Using purple or orange cauliflower adds even more pizzazz.
