A. Watch the Egg White Foams Lesson Video

B. Model Egg Foam Formation with Wikki Stix, Activity 1.7

Materials:

  • 12 Wikki Stix

  • Wooden Skewer

  • 3 Ping Pong Balls

Procedure:

Repeat the denaturation and coagulation simulation from Activity 1.2, but this time bond the Wikki Stix around ping pong balls to simulate the lining that forms around air bubbles in an egg white foam.

C. Foam Folding Practice with Soap Suds, Activity 1.8

Materials:

  • Large mixing bowl

  • Electric mixer

  • Rubber spatula

  • 1 tablespoon dishwashing liquid

  • 2 cups water

  • Liquid food coloring

Procedure:

Add the dishwashing liquid and water to the bowl. Beat with an electric mixer until a fine foam is formed. Drop a few drops of food coloring onto the surface of the foam. Using a proper technique, fold the food coloring into the foam until the color is evenly distributed throughout.
